These zucchini cakes make an elegant appetizer fit for those upcoming Oscar parties. Shredded fresh zucchini, is mixed with a little Parmesan, panko, paprika, garlic and a hint of ground nutmeg. The mixture is then pressed into patties and pan fried in olive oil until they are golden brown.
- 1 large zucchini
- 1 egg, room temperature
- 1 clove garlic, grated
- 1 cup panko
- 1/2 cup grated Parmesan cheese
- 1/4 tsp paprika
- 1 pinch nutmeg
- Salt & pepper to taste
- 1-2 Tbsp olive oil
- Grate the zucchini, then squeeze out the excess liquid with paper towels. Transfer to a mixing bowl.
- Add the egg, garlic, panko, Parmesan, paprika, nutmeg, salt and pepper. Mix thoroughly and form into 8 patties.
- Heat the olive oil over medium heat; once hot, add the patties and cook until golden brown, about 3-4 minutes per side.
