These zucchini cakes make an elegant appetizer fit for those upcoming Oscar parties. Shredded fresh zucchini, is mixed with a little Parmesan, panko, paprika, garlic and a hint of ground nutmeg. The mixture is then pressed into patties and pan fried in olive oil until they are golden brown.

  • 1 large zucchini
  • 1 egg, room temperature
  • 1 clove garlic, grated
  • 1 cup panko
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp paprika
  • 1 pinch nutmeg
  • Salt & pepper to taste
  • 1-2 Tbsp olive oil
  1. Grate the zucchini, then squeeze out the excess liquid with paper towels. Transfer to a mixing bowl.  
  2. Add the egg, garlic, panko, Parmesan, paprika, nutmeg, salt and pepper. Mix thoroughly and form into 8 patties. 
  3. Heat the olive oil over medium heat; once hot, add the patties and cook until golden brown, about 3-4 minutes per side.
