Cauliflower is truly a magical vegetable that is so useful and can be used in so many ways I never imagined possible. As I have gotten more committed with my Paleo cooking and eating, I am learning that I simply cannot live without cauliflower! Please note that I did not have time to get to Whole Foods to purchase the nutritional yeast so I simply used 3 oz. of cheddar cheese. If you are Paleo or dairy free, do not use any cheese and simply use the nutritional yeast which should lend a cheesy flavor of sorts. You can also get creative and add chives, scallions, jalapenos, rosemary, or whatever flavor boosters you might enjoy! I can’t wait to experiment with these and try all sorts of fun combinations.
- one head of cauliflower
- 2 eggs
- 1/2 cup of almond meal
- 1/4 cup of nutritional yeast (or if you are not eating paleo, you could use cheese) OR you can leave this out completely *
- 1/2 tsp of garlic salt
