Caramel Apple Cheesecake Cookie Bars I don't even like cheesecake and this looks amazing. Looks like you could sub rice or almond flour fairly easily to make it gluten free.

Ingredients
dough:
  • 1 cup (140 grams) all-purpose flour
  • 1/2 cup (100 grams) butter, room temperature
cream cheese filling:
  • 2 8-oz packages (500 grams) cream cheese, softened
  • 1/2 cup (100 grams) granulated white sugar
  • 1 tsp vanilla extract
  • 2 eggs
apple filling:
  • 2 larger apples (Golden Delicious)
  • 1/2 tsp ground cinnamon
  • 2 tbs granulated white sugar
crumb topping:
  • 1/2 cup (60 grams) oatmeal
  • 1/2 cup (100 grams) brown sugar
  • 1/2 cup (115 grams) butter, room temperature
  • 1 cup (140 grams) all-purpose flour
topping:
  • 3/4 cup (180 ml) caramel topping
